Bacon, Cheddar, Caramelized Onion and Potato Pierogi
Tonight for our Sunday dinner we decided to make pierogi. I have been cruising pinterest all week long for something I could sous chef on while sitting, as I am unfortunately still very broken. Since I have been at home a lot more I am itching for change and a brand new recipe seemed like a fun way to bring it.
Although my grandma's side of the family is polish and we are very much "live to eat not eat to live" people I think I've only had made from scratch pierogi twice. This is because everyone says its lots of work, I should listen to my elders. We realized what we were taking on when we realized that our tiny apartment is short on space and lacking a mixer. someday. Whenever we make things that require lots of mixing I always remind boy that a kitchen aid mixer on our registry is on the top ten reasons we need to get married... :P
The Pierogies turned out great and all the hard work was well worth it. We ended up having a build your own pierogi station with cheddar cheese, sour cream, chives, bacon, grilled onion and jalapenos. They were SO good. We agreed we will certainly be making them in the future and trying different fillings, but once we get our mixer!
